A dog absolutely needs to be taken out for shit, or else it needs to be trained to poop at a set place. I assume the latter is not done, the former is an absolute. You and your roommate needs to find an arrangement on outing time. If the roommate is not around, then someone else needs to take the dog out, or else, what can the dog do? You expect a dog to keep the shit contained, for god knows how long, until the roommate comes back, god knows when? Again, all this is based on a few assumptions! Perhaps Maverick was taken out promptly that morning, fed accordingly, treated well, but still pooped at home, due to lack of discipline. That other roommate still lives with you guys?
