Yeah, you didn’t know that? A lot of professional chefs actually recommend you make chili a day before and put it in the fridge to eat the next day. It gives the flavors time to congeal and mix, etc etc.
buffalobelle I can’t take full credit for the phrase. My Gramma always said “romance” as a way of saying “let things sit for a while.” Just passing on the family tradition of using the phrase.

Most soups/stews are better if you let all the ingredients “romance” overnight.

Yes, chili, beef stew, lasagna and some pizzas are all definitely better the next day.

Cake (particularly Bundt cakes) is also something that gets better letting it sit overnight. Just be sure to cover the cake before you let it sit out.

Chili, things with spices do taste better a day later since after its cooked the peppers and such ‘come to life’. Found this out one day myself.
